(Serves 2)
INGREDIENTS
• Beetroot – 2(Approx. 150 gm.)
• Onion -1 small
• Ginger - 1 tablespoon finely chopped
• Green chili -1
• Salt and pepper – as per taste
• Coconut oil – 2 tablespoon
• Coconut milk – 100 ml
• Coconut cream – 2 tablespoon

DIRECTIONS TO COOK
• Peel and roughly chop the beetroot, onion , chili and ginger
• Heat coconut oil in a pan and add roughly chopped onions, chilies, ginger and beetroot and sauté it.
• Add water accordingly and bring it to a boil, let it simmer for an hour.
• After this puree the contents in a blender and put it back on the flame.
• Add coconut milk, add some salt and pepper in the puree and heat it for few minutes.
• Your Beetroot and coconut soup is ready. Serve piping hot and finish it with coconut cream.
